Who makes it
The tea house
A family house in Shizuoka that has made nothing but tea since the 1800s, from the years when Japan was first opening to the outside world. The fourth generation runs it now. The house has taken first place at the Tokyo and Shizuoka tea competitions, including an award from Japan's Minister of Agriculture, and its head blender has won the national tea appraisal championship.
How it is blended
Blending is the whole craft. Soil, shade, harvest date and how far the drying is taken all move the flavour, and no two lots repeat, so a chashi works through the year's harvests by taste and builds each blend against a target. Nothing about it is automated.

Process
Shade-grown leaf, de-stemmed and de-veined, then milled into a fine powder.
How to enjoy
Straight, whisk 2g of powder into 60ml of water at 80°C for about 15 seconds. That is the whole recipe, and it drinks well as it is, hot or poured over ice. Milk rounds the edges off, so for a latte take 5g of powder, whisk it with 150ml of water first, pour 150ml of milk or alt milk into the glass and pour the matcha over it. If matcha is new to you, a little agave syrup softens it further.
Traceability
Ceremonial Grade, House Blend from Kagoshima, Shizuoka and Miyazaki, Japan. Milled and canned in September 2026. We buy in small lots and fill 30g cans, so the tin you open has been open to air for as short a time as we can manage.
Storage
Keep the lid on tight and the can somewhere cool and dark, away from anything with a strong smell. The powder comes in a sealed bag inside the can. Leave it in the bag, or tip it into the can and put the lid back on. Either way works. Once it is open, drink it within a few weeks. Matcha gives up its aroma to air faster than most teas.

02Water
80°C / 60ml
Boil the kettle, then let it stand a minute.
Tannins are what make matcha bite, and the hotter the water the faster they come out. At 80 degrees they hold back.
03Whisk

Your arm doesn’t move. Only the wrist. The speed of the tips decides how fine the foam gets.

Drink it while the foam is still standing.
Lift the whisk straight up out of the centre. It won’t wait for you.
Straight

How do I prepare it?

How many bowls do I get from one can?
About 15. A bowl takes 2g, and the can holds 30g. If you like it stronger, count on 10 to 12.
How should I store it?
Lid on tight, somewhere cool and dark, away from anything fragrant. Once opened, drink it within a few weeks. Matcha gives up its aroma to air faster than most teas.
