Details
Hojicha is roasted rather than shade grown, so it comes out toasty and mellow with no bitterness to manage, and there is hardly any caffeine in it. That makes it the one for the end of the day. Straight is how we drink it, with the roast all the way through. Add milk if you want it softer and it takes that well too. Either way the shaker gets you there without a bowl. The fin moulded into the base does the work of a whisk, so 20 seconds of shaking leaves it smooth, in a bottle that fits one hand.

The tea house
A family house founded more than a hundred years ago, also in its fourth generation. They buy leaf at the growing regions themselves rather than through a trading floor, which is how a single origin stays a single origin.
Why it can be whisked
Roasted tea is usually brewed rather than whisked. This house built a line for milling tea into powder, and that is what lets a roast this deep be ground fine enough to drink the way you drink matcha.

How to enjoy
Straight is how we drink it, hot in a bowl or cold from the shaker. Milk works too if you want it softer. Both methods are below under How to drink.
Traceability
Premium Grade, Single Origin hojicha from Kagoshima, Japan. Milled and canned in September 2026. We buy in small lots and fill 30g cans, so the tin you open has been open to air for as short a time as we can manage.
Storage
Keep the lid on tight and the can somewhere cool and dark, away from anything with a strong smell. The powder comes in a sealed bag inside the can. Leave it in the bag, or tip it into the can and put the lid back on. Either way works. Once it is open, drink it within a few weeks. Matcha gives up its aroma to air faster than most teas.

How to drink

01Dose

Two level scoops, about 2g.
Making a latte? Take 5g. Some like it stronger. You’ll know by the second cup.
02Water
80°C / 60ml
Boil the kettle, then let it stand a minute.
Tannins are what make matcha bite, and the hotter the water the faster they come out. At 80 degrees they hold back.
03Whisk

Back and forth in an M shape.
Your arm doesn’t move. Only the wrist. The speed of the tips decides how fine the foam gets.
04Sip
Now
Drink it while the foam is still standing.
Lift the whisk straight up out of the centre. It won’t wait for you.
Straight
Two level scoops of powder, about 2g, into 60ml of water at 80°C. Whisk for 15 seconds, until the foam closes over the surface. The recipe is the same for every can in the range.
HotDrink it from the bowl while the foam is still standing.
IcedWhisk it the same way, then pour it over a full glass of ice.
Latte
Take 5g of powder and whisk it with 150ml of water at 80°C first. Pour 150ml of milk or alt milk into the glass, then pour the matcha over it from the bowl, so it keeps its texture.
HotWarm the milk before it goes in and it will hold the foam.
IcedCold milk straight from the fridge, poured over ice.
